I am a big fan of make-ahead one-pan dishes like this Overnight Green Chile, Bacon, and Pepper Strata.
What is a Strata?
A strata is a simple baked dish comprising layers of bread, cheese, egg, and milk plus any combination of protein or veggies. Stratas are best assembled the night before. That overnight time allows the bread to fully absorb the egg and milk making for the most luscious custardy bite.
I made my first strata from a recipe I found in Sunset Magazine over 20 years ago. I have since made dozens of stratas, but I tend to like this particular combination of ingredients. There is something about the salt of the bacon and the heat of the peppers that is irresistible.
What Else is in this Strata?
For this version, I opted for my favorite Hatch Green Chiles, bacon, diced bell peppers, and Jack cheese. I love the light heat and bold flavor of mild Hatch Green Chiles, but if you want a little punch, use the hot version. Bacon is a great counterbalance to the chiles, and the bell peppers round out the pepper flavor. Jack cheese is a perfect partner for the chiles and helps to bring everything together. I like the tang of sourdough bread, but you could use any firm bread you have on hand, even whole wheat.
Great for Entertaining
This Overnight Green Chile, Bacon, and Pepper Strata is the perfect dish to make the night before your upcoming holiday breakfast or brunch. Serve it hot out of the oven or at room temperature. Add a few optional toppings like my Quick Pickled Red Onions, sour cream, avocados, and fresh cilantro to make it even more special. Your guests will be sure to walk away delighted!
